I suppose you could call these "open-face quesadillas".
To serve one:
1 flour tortilla
Grated cheese of your choice (I like a mixture of good Cheddar and Swiss)
1 fabulous, just-from-the-garden [next best thing is just-from-the-farmer’s-market] tomato.
Place the tortilla on a baking sheet and scatter the cheese evenly over the top of the tortilla.
Peel the tomato, then slice or dice–your choice–and place over the top of the cheese*
Place the tortilla under the broiler until cheese is melted and tomatoes are slightly cooked. Watch carefully, it only takes a minute or two. Remove, cut into wedges before serving hot or at room temperature.
*Alternatively, you can reserve the tomatoes and place the tortilla with cheese under the broiler, then scatter the fresh tomato over the cheese once you remove it from the oven.
Fresh minced herbs like basil, tarragon, dill, parsley, or mint make a great addition–scattered over the top just after removing from the oven.
