You can make this salad for 1 or 10…just keep adding tomatoes, cucumbers, etc.
To serve one, combine the following (adjusting as you go, according to your taste):
1 fresh tomato peeled and chopped into dice
1/2 small cucumber (peeled if "store-bought") cut into dice
1/2 small, sweet onion (like Vidalia) minced
A large handful of fresh parsley, minced
A large handful of fresh mint, minced
2 (or more) ounces crumbled Feta cheese
Toss all of the above in a bowl with salt to taste. Dress with about 1/4 cup olive oil and juice from one lemon. Serve with good bread.
